Strawberry Buttercream Frosting


I helped host a shower for my sister before she got married.  Who needs a better reason to research cake than spoiling your sister?!  I had to make a couple cakes before coming up with a strawberry buttercream that I liked.  The first one tasted okay but in Will's words:  "It looks like Barbie threw up right there."  So taste needed to be right, but it needed to look pretty too.  This one fit that description!

- 3 sticks unsalted butter, at room temperature
- 4-5 cups powdered sugar
- 4-7 tbsp pureed strawberries (fresh or frozen)
- 1 tsp vanilla extract

Using a mixer, blend the butter on medium until light and fluffy.  Add first 2 cups of sugar and blend until fully incorporated.  Alternate blending 2 tbsp strawberry puree and 1/2-1 cup sugar.  The key is tasting periodically and getting it to the strawberry flavor you want and the correct icing consistency.

So far, I have used this twice.  Once to ice a vanilla sheet cake (picture above).  Second in between layers of chocolate cake with a chocolate frosting.  Chocolate covered strawberries in the form of cake, yum!
